Soya is rich in protein. I love dishes with soya chunks and granules. Usually I prepare them with lots of masala. But yesterday I thought of preparing a simple thoran with Soya granules. Thoran is a typical Kerala cuisine side dish.Its a simple recipe and goes well with rice.
Ingredients:
1 cup Soya granules (I used Nutrela brand)
1/2 cup Onion, finely chopped
1/2 tsp Mustard seeds
3-4 Curry Leaves
1 tsp Oil
Salt
For grinding:
1/2 cup grated Coconut
1/4 tsp Cumin seeds
2 small Green chillies
2 small cloves Garlic
A pinch Turmeric
Boil about 2.5 to 3 cups of water. Put the soya granules and a little salt into the water.Let it cook for 5 minutes.Remove from fire and keep aside for 10 minutes. Now drain the water and once cooled, squeeze out water from the granules, keep them aside.
Put all the ingredients under For grinding in a mixer. Pulse it 2-3 times to get a coarse mixture.
Heat oil in a pan. Splutter mustard seeds. Add curry leaves and onions. Saute for a minute.Add the soya granules. Stir fry for 3-4 minutes.Add salt and finally the coconut mixture. Mix well and saute for few seconds.
Serve with rice.
Notes:
*You can use small onions instead of garlic for grinding with coconut.
