Thank you all for appreciating my new event Just "4" Fun and hope to see your support :). I got a few queries regarding this event. A few of my friends asked if water is included in 4 ingredients. Ok guys, I can exclude water, ice cubes...you can consider them as bonus ingredients :). As I said earlier, there are so many dishes which we prepare daily with less ingredients :). Few examples would be dosa, idly, chapathi, omelette, sandwich, milkshakes, poriyals/sidedish, raita, chutney, pakodas/fritters and so many snacks....Hope the event sounds simple now :). Don't restrict to the simple ones, hope to see some innovative dishes too :). Special thanks to all who has already sent some lovely entries.
This chutney is another recipe which I learnt from my mother. As I have said many times before, I can't make anything as tasty as my mother cooks :). Most of you might agree with me that mom's dishes are always the best !! This chutney is a little different from the usual coconut chutney though ingredients are same. Here the coconut is slightly fried along with shallots, dry chillies, curry leaves and then ground. This chutney is very delicious than the regular one and its usually served with rice, goes well with dosa and idly though. So its made as a slight dry chutney rather than the usual watery one, so water is added as less as possible. I can have white rice even if its served with this chutney alone :)

Serves 2-3
You need...
3/4 cup grated Coconut
3-4 Shallots chopped
3-4 Curry Leaves
2-3 Dry Red Chillies
a little Tamarind
1 tsp Oil
Salt
To prepare...
Heat oil in a pan. Saute coconut, shallots, curry leaves and red chillies until the coconut turns light brown. Allow this to cool. Once cooled, blend this along with a little tamarind and salt. Add water ( add only less to make a dry chutney) as necessary to get a smooth chutney. Best with rice, dosa and idly.

ReplyDeleteI too like chutneys with rice even if they are intended for breakfast. I made peanut chutney this morning with dosas and had it with white rice too. Will try this twist in coconut chutney next time.
