My hubby and myself love Mexican food a lot. I try to recreate some mexican food at home. I had posted the recipe of Mexican Gumbo few days back, which is one of our favourites. There were few chapathis left yesterday and I thought why don't I make some Quesadillas using them. I had some cooked beans left too, which I added along with the vegetables. They were a little different from the flour tortillas with which usually the Quesadillas are made of. But we liked these chapathi quesadillas too, a new fusion food with our desi chapathis :)

What you need?
4 Chapathi
1/2 cup chopped Onion
3/4 cup Vegetables of your choice (I used capsicum and corn)
1/2 cup cooked Pinto beans (or Black beans)
1/2 tsp Red chilli flakes/Pepper
1 tsp Oil
Seasoning - Oregano/Thyme
Cheese
Salt
How to prepare?
Heat oil in a pan. Add onions and saute until they turn pink. Add the vegetables and saute until they are cooked. Now add the beans and mix well. Sprinkle chilli flakes, salt, seasoning and mix. Filling is ready.
Heat a tava, spread a little oil. Now place one chapathi on the tava. Sprinkle some cheese. When cheese starts melting, spread some filling on top of cheese. Again sprinkle some cheese over filling, cover it with another chapathi. Apply a little oil on top of the chapathi. Now carefully flip the whole sandwich chapathi.Let it remain for another minute. Remove from tava and cut into 4 parts. Enjoy the hot Quesadillas with salsa or Guacamole.
