Wheat Kozhukattai (Jaggery version)

It feels so nice to be back to blogging after a short break...The long weekend went great with a train trip, movie, then a small snack party with friends and their kids nearby a lake. Kids had a really great time.I made the wheat kozhukattai for the party.I have already posted Sweet and Spicy Wheat Kozhukattai earlier. But that sweet version was a simple one using coconut and sugar. This time I made using jaggery which made the filling very delicious, though making a thick syrup of jaggery was a bit time consuming :)


Ingredients:
1.5 cup Wheat flour
1 cup Jaggery
1.5 cup Coconut
1/2 tsp Cardamom powder
1-2 tsp Ghee
1 tbsp Cashews and Raisins
1 cup Water
Salt


Boil the water and melt the jaggery in it. When the jaggery gets dissolved completely, remove from fire. Strain the jaggery so as to remove the impurities.You will get a thin jaggery syrup and now boil this.Keep stirring until you get a thick consistency.This might take some time. When you get the thick syrup, add coconut to it and mix well. Stir until you get a thick mixture and it should be completely dry. Add the ghee and cardamom powder. Break the cashews into small pieces. Add the cashews and raisins to the mixture and mix well. Allow the filling mixture to cool.




Dry roast the wheat flour for about 3-4 minutes. When its cooled, sprinkle some ghee or oil, add salt. Make a smooth dough by adding water.Now make equal sized small balls out of the dough. Roll them using hand or rolling pin into small flat circles. Keep the filling inside and make into shapes as you desire. Steam them in an idly cooker for about 8-10 minutes.

Makes about 15-16 Kozhukattai
