Grated Eggs Masala

I always try to come up with new dishes using eggs as they are mine and husband's favorite.Grated eggs masala is one such dish. I have tried adding grated eggs to gravies prepared in different style and all tasted good. Yesterday, I had to prepare a curry for the chapathi for dinner. So I made a simple gravy and grated the eggs into it.The best thing I like about this dish is that I can grate the eggs into the curry :). Hope you will like this idea and enjoy this different recipe.

Ingredients:

3 Eggs, hard boiled
1 large Onion, chopped
1 Tomato, finely chopped
1/2 tsp Cumin seeds
1 tsp Ginger-Garlic paste
1/2 tsp Chilli powder
1/2 tsp Coriander powder
1/2 tsp Chicken Masala ( or Garam masala)
few Coriander leaves, chopped
1 tsp Oil
Salt

Method:

Heat oil in a pan. Splutter cumin seeds.
Add onions and ginger-garlic paste. Saute until onions turn brown.
Now add the tomatoes and cook until the onion and tomatoes get blended well.
Add the spices and salt.Mix well, remove from fire and allow it to cool.
Once cooled, make a paste of this by adding a little water.

Heat the pan on a low flame. Add the paste and add water to get the consistency of a slight thick gravy.
Check for salt and chilli  at this point. Grate the eggs into the gravy.Mix well and cook for a minute or two.
Garnish with coriander leaves. Serve with Chapathi.
